About the Job
As Assistant Director of Food & Beverage at Mandarin Oriental Palace, Luzern, you will assist in managing all F&B operations, ensuring high-quality service, optimizing financial performance, and leading the team to deliver exceptional dining experiences. You will work closely with department heads to uphold the brand’s standards and contribute to strategic planning.
Responsibilities
* Supervising the day-to-day operation of the F&B Department
* Assisting the F&B Director in controlling and analysing on an on-going basis for the following:
o Guest Satisfaction
o Merchandising and marketing
o Revenues and Operating Costs
o Sanitation, cleanliness and hygiene
o Conduct weekly inspections of kitchens and restaurants with minuted follow-ups
o Prepare and control wine and beverage lists
o Conduct daily hotel tours to observe operational standards and difficulties and follow them up with the relevant Managers
o Ensure the monthly parstock adjustment of all operating equipment is updated in all outlets
o Assume the responsibilities of F&B Director in his absence
o Perform related duties and special projects as assigned by the director of F&B
o Plan in conjunction to the F&B Director and outlets Managers activities, promotions, menu implementations according to the annual marketing plan
* Ensuring that all designated action points, daily briefings or bi-monthly operational meetings are being followed by the individuals concerned
* Handling, under the guidance of the F&B Director, responsibilities such as hiring specific levels of employees, employee orientation, job performance appraisal, coaching to ensure appropriate staffing and productivity
* Ensuring training is carried out for all F&B personnel to maintain /upgrade our legendary service standards and complying to H&S standards
* Labour forecasting
* Assisting in the hotel’s strategy plan, annual marketing plan, goal program and budgeting for the F&B Department
* Updating daily, weekly and monthly F&B report
* Customer comments and complaints and their corrective action after consultation with the Director of F&B and concerned department head
* Complying with all legislation affecting the operation, including licensing regulations, health regulations and fire and safety regulations
* Reporting accidents to colleagues, guests or visitors according to the Hotel procedures
Qualifications
* Previous hotel luxury experience in a similar role
* Excellent knowledge of all aspects of F&B Operations, including Restaurant and Bar Management, Banqueting, In Room Dining, Culinary and Stewarding
* Must be highly numerate and able to work comprehensively with spreadsheets and budgeting packages
* Experience in developing strategic business and/or Food and Beverage plans
* Experience in Bench-marking activities
* Experience in Food and Beverage budget preparation, profit and loss statement analysis and forecasting
* Experience in the administration of Food and Beverage promotions
* Excellent forward planning and decision-making skills
* Experience in performance Management
* Experience in dealing with a multi-cultural environment and people oriented
* Good knowledge of Microsoft Office, including Word, Excel, PowerPoint
* Organised with high level of integrity and professionalism, reliable, courteous and with a good presentation
* Able to handle multiple tasks simultaneously, be enthusiastic and have initiative
* Excellent communication skills both written and verbal in German and English
