Mandarin Oriental Palace, Luzern is looking for a Pastry Sous Chef to join our Culinary team. The English and German sections are kept to preserve the original content while improving readability.
English: Mandarin Oriental Palace, Luzern is an iconic Belle Époque landmark, offering a premier luxury experience. The hotel comprises 136 rooms and suites, four restaurants, one bar together with a variety of meeting facilities, a Spa and a fitness room. Based at the Mandarin Oriental Palace, Lucerne, within the Culinary Department, the Pastry Chef is responsible for overseeing and managing the entire pastry kitchen. The Pastry Chef leads the team, ensuring the highest standards of quality, consistency, and efficiency across all areas of the pastry operation. This role includes supervising and coordinating all pastry production, developing innovative dessert and menu concepts, and reports to the Executive Pastry Chef in strategic planning and daily operations.
As Pastry Sous Chef, you will be responsible for the following duties:
* Work closely with the Executive Pastry Chef to execute the vision and maintain excellence across all pastry operations. Provide guidance, support, and motivation to the pâtisserie team in daily activities.
* Prepare and produce a wide range of cakes, pastries, desserts, and specialty items with precision and consistency.
* Manage and oversee production for banquets, events, and special functions, ensuring timely delivery and exceptional quality.
* Maintain organized and efficient daily mise en place to support seamless pastry operations.
* Contribute to menu planning, recipe creation, and the development of innovative dessert concepts.
* Coordinate with supervisors to request ingredients and supplies, monitor deliveries, and ensure proper storage and rotation of all goods.
* Ensure consistent adherence to quality, taste, and presentation standards across all pastry offerings.
* Monitor and enforce strict hygiene, safety, and cleanliness regulations within the pastry department.

* Completed culinary or pastry training, along with several years of professional experience in pâtisserie, ideally within the luxury hospitality or gastronomy

* Creativity and passion for bringing your own signature style into the pâtisserie
