Responsibilities include cleaning, cutting fish, and preparing rice (scaling fish, lifting fillets, shaping rice balls, rolling, etc.). Cooking seafood, shellfish, and other marine products. Assembling and seasoning various types of sushi: maki, nigiri, sashimi, California rolls, soups, etc. Knowing how to prepare large quantities of sushi in a short time. Paying particular attention to customer requirements, especially in cases of allergies. Plating dishes for service (knowing plating techniques). Managing stocks, following strict rules for raw fish to ensure hygiene and food safety. Preparing orders and receiving goods. Managing inventories and organizing cold storage rooms. Availability and flexibility required regarding hours (continuous and/or split shifts, working during weekends and holidays). Housing possibility.Required profile: Confirmed experience of at least 3 years in a similar position (ideally in excellent restaurants/japanese sushi bars). Your technical skills in this field are impeccable and your agility in sushi preparation is well recognized. You perfectly master fish filleting and sushi/maki preparation techniques. Passionate and fully engaged in your profession. Knowledge of HACCP standards. Your French is acceptable; other language skills are welcome.
