An exciting opportunity exists for a world-class F&B Controller to join our newly created luxury travel brand, “Explora Journeys”. The F&B Controller supports the Provision Master in preparing preloading reports, managing loading lists by store, supervising loading operations, executing receiving procedures in MMS, managing discrepancy reports, verifying daily movements according to S.O.P., conducting spot checks during cruises, assisting with final main store inventories, entering data into MMS, and generating financial reports.
KEY ACCOUNTABILITIES
1. Ensure the accuracy and reliability of all data, reports, and financial statistics prepared onboard.
2. Assist in the receiving of items at dockside, and oversee their safe storage and rotation in food storage areas.
3. Support the F&B store team in performing checks after loading, including spot checks on discrepancies between ordered and loaded quantities.
4. Record movements of all items into and out of the ship’s storerooms, and manage the controlled discharge of materials to authorized departments.
5. Generate statistics and reports related to F&B costs, analyze variances, and report findings.
6. Perform daily checks on ship orders to prevent shortages.
7. Provide feedback on material storage to prevent breakage and spoilage.
8. Maintain updated inventories with expiration dates for each item.
9. Conduct weekly checks on item cost fluctuations and report findings to management.
10. Create timely quality evaluation reports for items.
11. Load all relevant documents into MMS in accordance with physical quantities received and loading procedures.
12. Promote a work environment that supports a strong safety culture.
13. Report non-conformities or malfunctions in storerooms and monitor compliance with safety, health, sanitation, and environmental procedures.
14. Monitor Par Stock versus Target levels based on RDA and media data in the system.
15. Ensure compliance with Explora Journeys Standard Procedures, sanitation standards, and international regulations.
16. Possess a minimum of 4 years’ experience in a similar role within luxury hospitality or cruise lines.
17. Be fluent in oral and written English; additional languages are a plus.
18. Have a background in safe food handling and storage in a regulated environment.
