* Enforce the highest standards of cleanliness across all kitchens, food preparation areas, and back-of-house facilities, ensuring compliance with local health regulations.
* Recruit, train, schedule, and evaluate the stewarding team. Oversee daily shift assignments to ensure adequate coverage during peak dining and banquet periods.
* Maintain par stocks of operating equipment (china, glassware, flatware). Conduct routine inventories, prevent breakage, and requisition replacements.
* Monitor the proper use and storage of cleaning chemicals and machinery (e.g., dishwashing machines, trash compactors) to maximize efficiency.
* Coordinate closely with Executive Chefs and the F&B management team to support large-scale banquets, buffets, and daily restaurant operations
