For our campus in Le Bouveret - Culinary Arts Academy, we are looking for a :
As a Chef de Partie, you will be responsible for the daily operation of your assigned kitchen section, following the direction of the Kitchen Chef. You will ensure the high-quality preparation of dishes, working collaboratively with students and kitchen staff. Additionally, you will contribute to the creation and production of themed menus in close coordination with the restaurant manager.
Duties and Responsibilities:
Participate in menu development alongside colleagues, demonstrating consistent creativity and a strong commitment to both variety and quality
Coordinate the food stocks (In/Out), and ensure the cleanliness and hygiene of the fridges and cooking stations
Ensure that HACCP standards are respected in the production area
Demonstrate flexibility by working at any station as assigned by the Kitchen Chef, particularly during absences or special events.
Control:
Control that the lake view daily menu food preparation is done in accordance with the chef’s request
Guaranty a constant quality and freshness of the buffet
Monitor portion and waste control
Ensure that work safety procedures are applied in all areas
Student Supervision:
Advise students on menu preparation and techniques
Demonstrate sanitation, cleanliness and security of the kitchen and storerooms to students
Ensure a constant safe working place and positive learning environment
Experiences and qualifications:
Degree (CFC or equivalent) in Kitchen with 3-4 years work experience
Strong International Culinary knowledge
Fluent in French and English
Patient, responsible and leadership skills
Very well organised and passionate
