An exciting opportunity exists for a world-class Cellar Master to join our newly created luxury travel brand, “Explora Journeys,” to supervise the wine operation onboard. The Cellar Master is also responsible for training and developing the F&B team in wine service and product knowledge, while providing a vision for the future.
KEY ACCOUNTABILITIES
1. Collaborate with the Beverage Manager & Restaurant Operations Manager to oversee the overall beverage operation onboard, focusing on wine and beverage service in the dining rooms;
2. Work directly with the Sommelier & Beverage team using a hands-on leadership approach, emphasizing guest service techniques and experiences;
3. Deliver tasting events with professionalism and entertainment value, continually seeking ways to enhance the wine tasting program;
4. Ensure compliance with Public Health regulations and requirements at all times;
5. Manage the wine list upkeep, maintenance, and menu wine suggestions;
6. Facilitate asset management, maintaining facilities and equipment in good working order;
7. Participate in new crew training and development, focusing on crew retention;
8. Maintain wine par levels in all outlets, conduct spot checks, and ensure requisitions and transfer forms are completed accurately;
9. Assist the Beverage Manager in forecasting beverage consumption and placing timely, accurate orders;
10. Participate in the loading and overall management of the wine store;
11. Monitor PPD targets and actual figures;
12. Enhance wine knowledge for guests, provide upselling opportunities, and manage costs within budgets.
Minimum requirements include:
* At least 4 years of wine experience;
* Preferably a “Court of Master Sommeliers” Certified Sommelier or WSET Level 3-4;
* Fluency in English; additional European languages (Italian, French, German, Spanish, Portuguese) are highly regarded;
* Proficiency in MS Office Suite, Micros, Fidelio/Otalio, or similar systems;
* Flexibility and proactivity;
* Complete integrity.

Possess a valid passport; a seaman book is advantageous if available.
